Red beans & Brown rice medley
This is an absolute beauty another of our staples with minimal prep time ideal if you need something easy to prep. with a cook time of around 1 hour 30 mins.
Serves 8
Main ingredient's
- 230g red kidney beans
- 230g white cannellini beans
- 2Tbsp avocado oil
- 1 Onion (diced)
- 2 stalks of celery
- 1 poblano pepper (or green bell pepper)
- 3 garlic cloves (minced)
- 1.9 litres vegetable broth
- 2 bay leaves
- 1000g cooked brown rice (measured cooked)
- sea salt (to taste)
- pepper (to taste)
Seasonings
- 1 1/2 Tbsp Cajun seasoning
- 2 tsp smoked paprika
- 1tsp dried thyme
- pinch sea salt
- pinch pepper
Garnish with green onion
Steps
- Cook rice according to packet instructions then set aside
- Set a heavy bottomed pot on medium heat. Once hot, add avocado oil, onion, celery and bell pepper. Cook for about 2-3 minutes until the onions turn brown and slightly translucent. Add the garlic and seasonings and cook for an additional 1-2 minutes.
- Add red and white beans and stir thoroughly to ensure every bean is covered in oil and seasonings. Then add the broth and bring to a gentle simmer. Once it is simmering, add the bay leaves, then lower the temperature and partially cover and cook, while stirring occasionally, for 1 1/2 hours. for the final 30 mins of cooking remove the lid so more of the broth can evaporate.
- Continue to cook until the majority of the broth has reduced and the beans have become like a stew. Season to taste with sea salt and pepper.
- Spoon brown rice into bowls and ladle the red bean mix over the rice. Garnish with green onion, serve and enjoy!
